Coffee Crisps Recipe


Recipe : Coffee Crisps

Ingredients :

125g butter
125g raw sugar
1 egg
60g rice flour
60g coarse cornmeal
125g wheat meal
2 tsp baking powder
1 tbsp instant coffee powder
1/4 tsp salt
kibbled wheat

Method :

Cream butter and sugar and beat in the egg. Sift the remaining dry ingredients together and add to the mixture. Form into balls and roll in kibbled wheat. Bake in a moderate oven. The texture of these biscuits is short and crunchy and they lend themselves to variations. You could sprinkle with sunflower seeds or put a pistachio nut on top of each, or roll each biscuit in muesli meal.

Makes 30 slices
