Granary Bars Recipe


Recipe : Granary Bars

Ingredients :

60g butter
60g raw sugar
1 tsp vanilla
2 eggs
1/2 cup rye meal
1/2 cup wheat meal
1/2 cup rice flour
2 tsp baking powder
2 tbsp warmed jam
1/2 cup castor sugar
1 cup coconut

Method :

Grease in readiness a 23cm (9") square baking pan. Cream butter and sugar, add vanilla and egg yolks. Sift the flours together with baking powder and stir into the butter mixture. Press into the baking pan and spread evenly with jam. Whisk the egg whites until stiff, beat in the sugar and fold in the coconut. Spread over the jam and bake in a moderate oven. When cold cut into bars.

Oven 350F

Makes 18 slices
