Lemon Spice Buttons Recipe
Recipe : Lemon Spice Buttons
Ingredients :
2 cups white plain flour
3/4 cup white self-raising flour
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cloves
30g prune puree
30g reduced fat butter/margarine
1/2 cup brown sugar (80g loosely packed)
1/2 cup golden syrup
1 egg white, lightly beaten
Icing -
3/4 cup icing sugar
1/2 egg white
1 tsp white plain flour
1/2 tbsp lemon juice
few drops lemon essence
1 drop yellow food color (optional)
Method :
Preheat
oven to moderate 200C. Lightly spray 2 flat oven trays with
vegetable oil spray. Sift first 5 ingredients together in a medium
bowl. Set aside. Combine butter, prune puree, sugar and golden syrup
in a small saucepan and stir over low heat until butter is melted
and sugar dissolved. Remove from heat and allow to cool for 10
minutes.
Pour the
butter mixture into a large mixing bowl and stir in the lightly
beaten egg white. Gently fold in the sifted dry ingredients. Knead
gently with hands until mixture becomes less sticky. Cover the
mixture and refrigerate for 1/2 hour.
Remove
chilled dough from bowl and place it between 2 sheets of greaseproof
paper. Using a rolling pin, roll dough out until approximately 1cm
thick. Cut into rounds using a 3cm cutter and place onto prepared
oven trays about 3cm apart. Bake for 6-8 minutes or until lightly
browned. Allow to cool on trays. When cool, dip biscuits halfway
into icing to coat, resting them on the edge of a tray so that icing
can set. Refrigerate for 10 minutes to harden. Remove from fridge
and store in an airtight container.
Icing -
Sift icing sugar and flour together. Set aside. In a small deep
bowl, beat egg white lightly and gradually fold in the sifted icing
sugar and flour. Stir in the lemon essence and enough lemon juice to
mix the icing to a consistency that is not too runny. Fold in the
food coloring.
