Farmhouse Bean and Pasta Soup Recipe
Recipe : Farmhouse Bean and Pasta Soup
Ingredients :
2 small leeks, sliced
1 onion, chopped
6 cups water
3 chicken stock cubes
1 sliced zucchini
375g fresh ripe tomatoes, chopped (or 1 x 440g can
tomatoes, drained)
1 x 440g can red kidney beans, drained
1/2 tsp curry powder
ground black pepper to taste
1/2 cup dry macaroni
Method :
Spray a large saucepan lightly with vegetable oil spray and cook
onion and leeks for 2-3 minutes.
Add all other ingredients except the macaroni - bring to the boil
and then simmer for 2 hours.
While soup is simmering cook the macaroni in 3 cups water and drain
Add the cooked macaroni to the soup after 90 minutes.
Serve with
hot tomato, basil and olive muffins.
