Cheesy Avocado Savouries Recipe

A delightful combination of avocado, nuts and cheese, this recipe doesn't need the addition of salt to enhance the taste of these delicious party savouries.


Recipe : Cheesy Avocado Savouries

Ingredients :

1 ripe avocado

30ml / 2 tbsp single cream or natural yoghurt

1 clove garlic, crushed

5ml / 1 tsp lemon juice

90g / 3 oz finely grated Cheddar cheese

5ml / 1 tsp ready-made English mustard

30g / 1 oz fresh white breadcrumbs

3 spring onions, finely chopped

freshly ground black pepper, to taste

30ml / 2 tbsp freshly chopped parsley

60g / 2 oz toasted, chopped almonds

Method :

Cut the avocado in half lengthways and carefully twist it apart. Remove the stone and peel away the skin from the avocado halves using a sharp knife. Mash the avocado flesh into a medium-sized bowl using a fork or a small potato masher. Stir the cream or yogurt, garlic, lemon juice, grated cheese, mustard, breadcrumbs, onions, and pepper into the mashed avocado. Mix together well with a fork until a stiff paste results.

Using your hands, roll teaspoonfuls of the avocado mixture into small balls. Spread the parsley onto one small plate and the almonds onto another. Roll half the number of avocado balls into the finely chopped parsley pressing it gently into the surface to coat thoroughly. Roll the remaining avocado balls into the almonds in the same manner. Refrigerate the coated snacks for 40 minutes before serving with drinks.

Preparation - It is most important to keep the mixture cool when preparing these snacks. If you have difficulty forming the mixture into small balls, refrigerate for at least 30 minutes.

Variation - Use finely chopped walnuts instead of the almonds, and Stilton cheese instead of the Cheddar.
