Spiced Nuts Recipe
Everyone
like to nibble nuts with drinks at a party, but most contain very
high quantities of salt. These delicious spiced nuts contain no
salt, are extremely easy to make, and can be prepared well in
advance.
Recipe : Spiced Nuts
Ingredients :
30ml / 2 tbsp corn or vegetable oil
120g / 4 oz fresh peanuts, shelled and husked
120g / 4 oz blanched almonds
120g / 4 oz fresh cashew nuts, shelled and husked
2.5ml / 1/2 tsp ground ginger
2.5ml / 1/2 tsp ground cinnamon
2.5ml / 1/2 tsp cayenne pepper
Method :
Heat the
oil in a large frying pan. Stir the nuts into the hot oil, making
sure they are evenly coated. Stir in the nuts, mixing well to coat
evenly with the hot oil. Sprinkle the spices over the nuts and stir
well to coat evenly. Transfer the nuts to an ovenproof dish,
spreading them in an even layer. Toast the nuts for 10-15 minutes in
a preheated oven, 190C/375F/ Gas Mark 5. To prevent the nuts from
burning, turn them with a fish slice or palette knife once or twice
during the cooking time.
Cook's tip - Prepare these nuts in advance and store
them for up to 2 weeks in an airtight container.
Variation - Use hazelnuts instead of cashew nuts, and
ground cardamom, cumin and chili powder instead of the ginger,
cinnamon and cayenne pepper.
